Chef Nadje’s new four-course menu offers a preview of his creative direction for the Grill’s future. Centred on the flavours of fire and smoke, it features dishes such as a grilled seasonal vegetable platter, local red mullet with shiso purée and smoked mandarin confit, grilled chicken marinated with tarragon and roasted salsify and a Tahitian vanilla, chestnut and pear dessert with dark rum ice cream.
